Chicken Fajitas

Ingredients
- 2 lbs Boneless chicken breasts
- 2 Mixed bell peppers I tend to stay away from the green peppers as I find them more bitter
- ½ Yellow onion
- 4 cloves Minced garlic
- ½ cup Olive oil
- ½ Lime – Juiced
Seasoning Mixture
- 1 tsp Onion powder
- 1 tsp Smoked paprika
- ½ tsp Fresh ground black pepper
- 1 tbsp Cumin
- ½ tbsp Chili powder
- ¼ tsp Salt
- ½ tsp Oregano
- 1 tsp Garlic powder
Instructions
- Preheat oven to 425°F.
- Combine seasoning mixture, and set aside.
- Julienne bell peppers and yellow onion, and toss into a large mixing bowl.
- Cut chicken breasts horizontally into ¼-½" strips. If these strips feel too thick simply slice them in half! (I slice my chicken this way so they are easier to layer in a quesadilla or burrito). Toss chicken strips into the mixing bowl.
- Combine the olive oil, seasoning mixture, and minced garlic into the mixing bowl. Squeeze the 1/2 lime over the ingredients and massage until evenly coated. Set the bowl aside.
- On a medium to large lightly greased baking sheet evenly spread the mixed ingredients. Be sure to get all the oil and seasoning out of the mixing bowl!
- Place the baking sheet in the oven. Cook for 20-25 minutes, flipping halfway through.
- Remove from the oven, let cool for 5-10 minutes. Garnish with cilantro if desired.
- Serve with tortillas and toppings. Enjoy!
